Stilton is sour, tangy cheese that are only for people with an acquired taste. That said - these are a dip into the flavour world of Stilton, as the actual cheese is a lot stronger - but I think they've picked the right amount of tang here. Any more and it would be getting pretty fungal.
They've hit the Stilton mark on the spot, but i'm not sure it's the style of cheese I would use. There's so many amazing cheeses out there.. I'm looking forward to more.
